Butternut Squash in Slow Cooker

I am so in love with my slow cooker lately. I wish I had two or three I use it so often. When I discovered a Butternut squash in slow cooker recipe I was giddy to cook my favorite winter squash with little effort. I know that sounds so silly, but I really love butternut squash. Once you make butternut squash in slow cooker recipe, you will never have it any other way. It comes out perfect every time.  Once the butternut squash is cooked I could sit and eat a whole bowl with a little honey and cinnamon. Yum!

Ingredients for Butternut Squash in Slow Cooker recipe:

Butternut squash
Water

How to make Butternut Squash in Slow Cooker:

1. Place about 1 inch of water in the bottom of the slow cooker, or about a cup of water.

2. Cut a small butternut squash in half. scoop out all of the seeds. Save and rinse the seeds. Toast them later for a great snack. You know I don’t throw any thing away!

3. Place the butternut squash in slow cooker and put on the lid. Put the slow cooker on low for 8 hours.

4. The butternut squash will be done no matter what. No second guessing. It has cooked slowly for 8 hours and the butternut squash is perfect consistency.

5. Take a fork or a spoon and scoop out all the golden squash into a bowl or container to store and use for later. Try not to eat it all as you are putting it in the dish. This is really difficult for me.

Once it is cooked the butternut squash can be stored in your fridge for about a week, or you can freeze it in containers or in quart size freezer bags in a bout a cup. Lay them flat to freeze. You may not have ever cooked or made a butternut squash, so what do you do with it besides eat it or make soup? Butternut squash is a wonderful substitute for anything pumpkin. It has a very similar taste and texture of a pumpkin, since these are both winter squash. When you want to make that wonderful pumpkin dish and don’t have any any pumpkin, think about using butternut squash instead. I know I have made butternut squash in the oven and sometimes it is not done after an hour in the oven. Anything that cooks for 8 hours, it has got to be done!

Friday Finals – Organic & Produce Savings

I have had a crazy week this week. My mom has been really ill and in the hospital for the past couple of weeks. I even went down to see her in Austin for a few days last week. Those things are really hard for me to write about, since I really don’t want sympathy from anyone. For some reason people feeling sorry for me always makes me feel worse. With all of this going on, it has made me a little depressed over the past few days. I am trying to work out of it. We now have good news she will hopefully be on her way home on Monday. I do feel a lot better today with this good news! 

I tried to make homemade yogurt with a recipe I found. However, it was a complete fail. It wasn’t the recipes fault, but I didn’t follow instructions. I tried to see if it would work anyway, but no. I was really looking forward to sharing this recipe with you, but I will have to wait until next week. Now I know not to add all the ingredients at the beginning, but wait until the end. Oh well live and learn. We were really looking forward to having homemade organic yogurt at our house for half the cost.

I spent $32.76 and saved $0.10 for using my own bags at Sprouts. Looking forward to having homemade jelly, apple butter and apple sauce. Get ready for the recipes coming soon.

Even with everyone looking for a little more help in tight economic times, individuals seem to be feeling extra charitable over the last year. I am not going to go into all the details, but to make a it short, dollars donated have increased 1.3% from 2010 to 2011. Surprising, right? But as more is being donated, more is also needed. Holidays tend to bring more awareness to charities, and donation opportunities are presented at almost every retailer you visit. How do you react to these opportunities?
Do you donate every chance you get?
Do you throw a handful of coins into the Salvation Army’s red bucket once or twice?
Do you do whatever you can to avoid contact with the donation seekers because you literally don’t even have a penny to give?

Just last year, I was in the last category. In a way, I still am in that last category! But I have discovered alternative, more creative ways to give to others besides pulling cash out of my pocket.  The Bunnies of Christmas…

 Often the Holidays can be a difficult or lonely time for those who have no family or friends nearby, or are left behind because it is difficult to manage having one come to visit for a holiday visit-perhaps due to constraints of illness.  Or sadder still, whether through ill family relations or neglectful family, the elderly or disabled family member is left behind.

It is usually difficult for an elderly or sick person in a nursing home, hospital, or assisted living facility, who receives few or no visits, to watch others receive visits or go out during the holiday season.  I have seen this first hand, having worked in nursing homes, a rehab hospital and mental health facility for about 18 years. Even the smallest gesture is appreciated by these people and can mean a lot.
